    One thing I love about making soup is that it always ends up being special.  I will never forget the story that one of my elementary teachers told me about Stone Soup.  As you may know, the story is about a soup that started off with simply water and stones and as people passed by the maker of the soup to see what he is doing, each person ended up adding a special ingredient of their own until the soup became a community production.

    There’s nothing like making your morning breakfast with a little extra love. I decided to make biscuits and gray over the weekend and make my biscuits in the shape of hearts. I can’t wait to use a different cookie cutter for the biscuits next weekend. Biscuits and gray is so easy to make and most people already have all the ingredients needed in the kitchen.

    Shae and I were brainstorming a treat to take to the Tulsa Wine Club meeting tonight. We just picked up this mini crock-pot at the store, with some Lit’l Smoker (AKA mini wieners) and some of Oklahoma’s own Head Country BBQ Sauce. The results are one of my favorite party offerings. Yum!

    Dad's Pineapple Upside Down Cake

    My dad makes amazing Pineapple Upside Down Cake! Now you can too with the recipe below. Check out the pictures and let me know about your favorite pineapple upside down cake.

    With so many holidays coming good food like this has been on my mind…not to mention some good quality time with family.

    Love you dad!

    pu-cake-5

    • 1/4 cup butter or margarine
    • 2/3 cup packed brown sugar
    • 9 slices pineapple in juice (from 14-oz can), drained
    • 9 maraschino cherries without stems, if desired

    You can save the pineapple juice and use it in place of some of the water that you add to the cake mix

    1. Prepare a box of yellow cake mix following the directions on the box to mix the batter (do not bake in a separate pan; follow instructions below).
    2. Pour the batter over the pineapple and cherries.
    3. Heat oven to 350°F. In 9-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in center of each pineapple slice.
    4. In medium bowl,beat cake mix following the directions on the box and adding pineapple juice for some of the water if desired, with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries.
    5. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm. Store cake loosely covered.

    Optional: Instead of using a cake mix, you can prepare the batter from scratch using the recipe below, or any recipe for yellow cake.

    Scratch Cake:
    1 cup flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    2 eggs
    2/3 cup sugar
    1/4 cup milk
    Combine ingredients and beat 1 minute. Pour batter over pineapples and cherries (same as above). Bake at 350°F and follow same steps as above.

    mmhmm, Sunday nights are my favorite. Now making White Chocolate Chip Macadamia Nut Cookies. Gosh they are gonna be so good.

    We used the recipe on the back of the Hershey’s bag

    Ingredients:

    * 1 cup (2 sticks) butter or margarine, softened
    * 2 cups sugar
    * 2 eggs
    * 2 teaspoons vanilla extract
    * 2 cups all-purpose flour
    * 3/4 cup HERSHEY’S Cocoa
    * 1 teaspoon baking soda
    * 1/2 teaspoon salt
    * 2 cups (12-oz. pkg.) HERSHEY’S Premier White Chips

    Directions:

    1. Heat oven to 350°F.

    2. Beat butter and sugar in large bowl until creamy. Add eggs and vanilla; beat until light and fluffy. Stir together flour, cocoa, baking soda and salt; gradually beat into butter mixture. Stir in white chips. Drop by rounded teaspoons onto ungreased cookie sheet.

    3. Bake 8 to 9 minutes. (Do not overbake; cookies will be soft. They will puff while baking; flatten upon cooling.) Cool slightly; remove from cookie sheet to wire rack. Cool completely. About 4-1/2 dozen cookies.
